Pies in the morning, one table at night
Petros cooks the way the Zagori cooked when there was nothing to buy: from what the slope, the garden and the neighbours have, and from his grandmother’s blue notebook.
Breakfast, from eight to half past ten
At the long table in the kitchen, or in the courtyard under the walnut from May. Everything is included in the rate.
- Three pies
- Rolled that morning. One green, one cheese, one from the notebook, changed by the day.
- Sheep’s yoghurt
- From a shepherd in Kipi, with thyme honey from Vradeto.
- Eggs
- From Kyra Froso’s hens, fried in olive oil with tomato, or boiled.
- Trahana with feta
- On cold mornings, when a pie is not enough.
- Bread
- Sourdough, baked in the wood oven on Tuesdays and Fridays.
- Mountain tea
- Sideritis, with the wild oregano and mint Petros picks behind the church.
- Preserves
- Cornelian cherry, quince, green walnut. Spoon sweets, the way they are offered in any Zagori house.
- Coffee
- Greek coffee in a briki, or filter. Nobody here will make you a flat white.
A pie for each day of the week
Beside the green pie and the cheese pie, the third one follows Kyra Vangelio’s week. She wrote it down in 1970 and Petros has not changed it.
About the blue notebook- Leek pie πρασόπιταLeeks softened in butter, with feta and a little trahana.
- Nettle and greens pie τσουκνιδόπιταNettles, sorrel and wild fennel, whatever the slope has.
- Pumpkin pie κολοκυθόπιταGrated pumpkin, raisins and walnuts, not too sweet.
- Striftopita στριφτόπιταA coil of thin pastry around feta, baked in a round tray.
- Meat pie κρεατόπιταLamb and rice, with mint. The one people ask for the recipe of.
- Cheese pie τυρόπιταThree cheeses and eggs, in a pastry rolled thinner than paper.
- Rice and milk pie γαλατόπιτα με ρύζιKyra Vangelio’s Sunday pie, sweet with cinnamon.
